Tracee Jalapeno Sandwhich

Well, I was not joking when I said pickled peppers are my summer obsession. This past week I had them with my tuna, with my eggs and I just made this sandwich up today for on the go. It’s a brown rice tortilla with sliced deli turkey, pickled jalapeños and my kale Ceasar salad. Shut the front door…it’s deelish!

So the other day I reposted an image that I saw on Instagram that absolutely killed me!  Seriously, I was crying with laughter.  As funny as it was, it started to stir something inside me–a bit of which I expressed in my Instagram caption– but the more I thought on it, the more I realized it needed a larger response.  So I took to my laptop and recorded a video! Apologies for the blurriness, I’m doing my best to be more technologically savvy but apparently it’s a process, hahaha! Pickled peppers, they seem to be all the rage this summer.  Just last week I had the most amazing dish composed of little pieces of toast, sliced hard boiled eggs, pickled jalapeño peppers, and a light drizzle of olive oil. It was, as Julia Child would say, AMAZEBALLS! But seriously, it was insanely delicious and has made me OBSESSED with pickled peppers. They’re simple to make, you just…who am I kidding I don’t know how to pickle but here’s a recipe! Follow it, and enjoy all the tasty goodness of pickled peppers!  Once you’ve made (or bought, no judgment) your pickled peppers you can add them to anything! Making a nicoise salad?  Why not add some picked peppers?! Add ‘em into my recipe for mashed eggs!
