Thanks to the suggestion from my dear friend Mary Helen Bowers (creator of Ballet Beautiful) I am loving “Mashed Eggs”! Funny name I know, but trust me, this is really delicious. At it’s the simplest! This dish is chopped eggs with olive oil, salt & pepper. I have made them in 3 different ways with a variety of ingredients and so far they have all been delish!

Hard-boil your eggs:
The key to hard-boiling and being able to peel the eggs when they are done is to start with a pot full of cold eggs. Cover the eggs with cold water and turn the heat on medium. Once the water begins to boil, cook the eggs for about 12 minutes. Remove them from the water with a slotted spoon and shock them in ice water until they are cool enough to handle!
Yummy Olive Oil:
First Cold Pressed Organic Colvita is my fav. It’s easy to find and it’s tasty.
Salt and Pepper:
I love Celtic Sea Salt and fresh cracked pepper!
