I was heading to the airport the other day and wanted to bring something healthy and yummy for the planeâ€¦mostly to deter me form buying crazy amounts of crap at the airport to eat while in the air. Â I had not been to the market because I was travelling so all I had was nonperishables and some carrots. Well, here is what I created! It was deelish, and still crunchy and yummy mid-flight to NY. Â Best of all, it wasn’t embarrassing or smelly when I broke it open.
This Quinoa Salad is quick and easy to make, plus it’s gluten free:
-1 cup of grain to 2 cups of water (or broth).
-Bring to a boil, uncovered and once boiling remove from flame and cover until the Quinoa is fluffy.
-Crushed raw almonds (see video to see how I crush ‘em!)
-Sprinkle on some dried berries
-And Lemon, olive oil and Bragg liquid amino!!!
I am sure there are many variations and additions we could add to this but it is perfect to bring to work for lunch to bring to work or for a day on the go in the car.
