Kitchen Math: This + That = Delicious!
I was heading to the airport the other day and wanted to bring something healthy and yummy for the plane…mostly to deter me form buying crazy amounts of crap at the airport to eat while in the air. I had not been to the market because I was travelling so all I had was nonperishables and some carrots. Well, here is what I created! It was deelish, and still crunchy and yummy mid-flight to NY. Best of all, it wasn’t embarrassing or smelly when I broke it open.
This Quinoa Salad is quick and easy to make, plus it’s gluten free:
-1 cup of grain to 2 cups of water (or broth).
-Bring to a boil, uncovered and once boiling remove from flame and cover until the Quinoa is fluffy.
Then add:
-Shredded carrots
-Crushed raw almonds (see video to see how I crush ‘em!)
-Sprinkle on some dried berries
-And Lemon, olive oil and Bragg liquid amino!!!
I am sure there are many variations and additions we could add to this but it is perfect to bring to work for lunch to bring to work or for a day on the go in the car.
