I am known as a GREAT salad maker! Its true! I’m happy to toot my own horn on this cause, well, I doÂ make GREAT salads. Â I LOVE salads of all kinds. Â There is nothing like lettuce; so manyÂ differentÂ kinds, so much freshness! Â One of my favorites is arugula.
ARUGULA’s got a bite to it, its pretty and hearty. Â There are so many easy variations of the standard arugula salad! Â One of the many reasons this recipeâ€™s so great is because you can easily access the ingredients no matter the season. Â It’s fresh and feels very gourmet, while still being cheap and fast!
Personally, I always keep dried berries in the pantry (they keep forever and are always an easy treat with some raw almonds when I’m starving and rushing out the door). Â But you can also useÂ apples and figs (dry or fresh) orÂ you can replace that sweet element with just about any fruit. Â All kinds of arugula will work (wild, baby, from a bag) just make sure itâ€™s clean and dry. Â I think this salad is best paired with steak or salmon, but it is great with many things, you can use your imagination!
2Â fistfulsÂ of fresh, washed and dried Arugula
Â¼ Red Onion, sliced paper-thin
Â¼ c. Dried Berries (or other fruit like peaches, apple or strawberries)
1 tbsp. Olive Oil
Lemon Juice to taste
Salt and Pepper to taste.
Slice onions first. Â The trick with raw onions is to sprinkle them with a small amount of salt and give them a gentle massage. Â Then let the onions stand while you prepare the rest of the salad. Â Mix arugula and fruit, Â then the salted onions. Â Drizzle olive oil overtop. Â Squeeze half lemon, add some cracked pepper and lightly toss!
Variations: When theyâ€™re in season I love adding avocado and soaked raw almonds. If you want to make this a very fancy dish then sautÃ© the raw almonds with 1 tbsp. butter, crushed red pepper, brown sugar and salt. This makes the nuts sweet and spicy! Guests LOVE it!
